To open the shelled seeds, put them in a paper bag and crush with a rolling pin. Then put all of it in water: the seeds will sink while the shells float. This makes it easy to gather the seeds. Dry the seeds on a paper towel. Some recommend soaking the seeds overnight before using them in order to increase their digestibility.
