From the Cactus family, there are more than 100 varieties of agave. By growing on the volcanic soils of Mexico, the Blue Agave is the most used for its fructose content.

Its syrup is a natural sweetener stemming from the extraction of SAP. It should be noted that vegans consider agave syrup to be an acceptable food : “raw” food with a cooking temperature not exceeding 45 ° C.

The Aztecs also used it for therapeutic purposes, including antibacterial treatment against skin diseases.
